- 6 Persian cucumbers (or small English cucumbers)
- 1 lb. smoked salmon
- (1) 8 oz. package cream cheese, softened
- 3 T fresh dill, chopped
- 3 T fresh parseley, chopped
- 1 T heavy cream (optional)

Smoked Salmon & Cucumber Rolls
INGREDIENTS
INSTRUCTIONS
1. Using a vegetable peeler, slice cucumbers lengthwise into long strips
2. Cut smoked salmon into strips that are roughly the same size as the cucumber strips
3. Place cream cheese, dill, parsley, and cream in a large bowl, mix until smooth
4. Take one strip of cucumber and place on a dry paper towel, flipping a few time so both sides are dry
5. Spread 1 teaspoon of herb cheese mixture on cucumber slice and then top cheese with layer of smoked salmon
5. Carefully roll up the strip and secure with a toothpick horizontally and garnish top with fresh sprigs of dill.
6. Repeat with remaining strips
7. Serve immediately, or keep refrigerated until needed
